So what is Gyu Shige (pronounced gyoh shee-eh)? In Japanese, “Gyu” means “cow”, “shige” means “busy”.

The very first Gyu Shige was established in 1988 at Tokyo, Japan. Today, there are over 160 stores across the world. The Mosaic District VA. location is the first location in the United States.

Yakiniku is the name for barbecue in Japan. Because it focuses on drawing out the natural flavor of the meat, many cuts of the beef do not come marinated or pre-seasoned. Additional seasoning is often no more than a bit of salt, or a splash of “tare” (dipping sauce) after the meat has been grilled.

In Japan, to qualify for the Wagyu (Japanese Cow) designation, cattle have to be reared and fed according to a strict guideline. This type of diet allows for that signature fat marbling that Wagyu is best known for.

Wagyu cattle are also raised in a zen-like environment. Noise level is controlled so the cattle don’t get scared. Instead of being assigned numbers, they are given names! Young Wagyu calves are fed by a milk replacer by hand, and they wear jackets when it gets cold.

The result is a rich, luscious cut of beef that practically melts in your mouth.

There are many different kinds & grades of Wagyu with A5 being the most premium level. However, in most places that you can purchase, they are actually either American Wagyu or Australia Wagyu. All authentic Japanese A5 Wagyu comes with a birth certificate and a certificate of authentication letter.
